foodie friday: chocolate chip almond meal banana muffins

Remember my random moment of the week? As a result I ended up making some of the most delicious banana muffins I’ve ever made. Complete with chocolate chips, of course. I think I ate most of them, only reluctantly sharing with my friend and Kh to get their opinion. So. Good! I’m the type of women that eats just about all of what she bakes. Unless of course it’s terrible then I pawn it off on others.

Ingredients:
1 1/2 cup almond meal
3 eggs
1/4 cup oil
3/4 cup sugar
4 bananas
a pinch of cinnamon
a pinch of salt
and as many chocolate chips as you want
Directions:
1. My oven sucks, so preheat your oven to roughly 350º (mine had to be a bit higher at 375º).
2. In a large mixing bowl mix all the ingredients together! Mix it up real good. I put the chocolate chips in last so I could get a feel for just how many I wanted.
3. Lightly grease whatever vessel will be carrying your mixture into baked creation. I put cupcake liners in my cupcake tin and just used that. You could lightly grease a loaf pan, or the likes.
4. Bake for roughly 45minutes (again my oven sucks). Keep an eye on them, testing them with a toothpick often until they are a golden brown.
5. Let cool and enjoy.
