I find the best part about the holiday season is all the cookie recipes that pop up. I remember being younger visiting my Grandma and finding plates of all different types of cookies. My favorite were always the little peanut butter ones with the Hershey kisses in the middle. I’d steal a bunch of them to bring home with me. Nestled away under the plastic wrap and tupper ware container, always there when I needed a snack.

In honor of the holiday cooking tradition, here’s some of the more delicious recipes I’ve seen floating around recently. But my recent all time favorite would have to be no bake cookies. Recipe is at the end!

And my absolute favorite (probably because of how quick it is to make!) no bake cookies.

Recipe

Ingredients

  • 2 cups white sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup margarine/butter
  • 1/2 cup peanut butter
  • 3 cups quick cooking oats

    Directions

    1. In a saucepan over medium heat, combine the sugar, cocoa, milk and margarine/butter. Bring to a boil, stirring occasionally. Boil for 1 minute 30 seconds, then remove from heat and stir in the peanut butter and oats.
    2. Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour or until solidified.

I’ve seen some recipes with chunky peanut butter, and vanilla extract. The one thing I’ve learned is make sure you boil it for exactly a minute and 30 seconds. Anything longer or shorter and the ingredients won’t solidify.
